Le puit d’amour can only be found in a couple of places in Bordeaux. It’s a true regional dessert which comes from the southern part of Gironde. The story started in 1940 however it was four years later that the family Seguin opened their first shop in Captieux in 1944. The shop in Captieux still exists to this day and new shops have opened in Bordeaux rather recently.
The exact recipe has been kept top secret. The base is a choux pastry, which is filled with a Chiboust cream ( pastry cream mixed with meringue) and then caramelised on the top. It’s an extremely light dessert much appreciated by the locals.
